    Kale Quinoa Salad with Lemon Dressing

    This simple Kale Quinoa Salad with Lemon Dressing is made all in one pot with minimal ingredients and minimal clean-up! A perfect side dish or meal prep lunch.

    I adore this Kale Quinoa Salad for its simplicity and its flexibility.

    First things first, I'm a firm believer that your time spent in the kitchen should be as efficient and easy as possible. So to that end, I created this recipe to make made all in one pot.

    You cook the quinoa, wilt the kale, add flavor and make the dressing all right in the pot. Minimal effort, minimal clean-up and maximum flavor. The perfect recipe - and it comes together in just under 25 minutes!

    Secondly, the flavors in this Kale Quinoa Salad with Lemon Dressing at so simple and versatile that it's an awesome side dish or side salad for just about any meal. Tossing some chicken on the grill? Sauteing up some shrimp? Baking a piece of salmon? This Kale Salad is a perfect, delicious, healthy counterpart.

    You can enjoy it warm, cold or room temperature. And it's *almost* better leftover! Make it on Sunday for meal prepped lunches throughout the week or double your batch on a weeknight to have over the next few days!

    How to Make Kale Quinoa Salad with Lemon Dressing:

    Start by cooking the quinoa. When the quinoa has just finished cooking, toss in the shredded kale and the white of the scallion and put the cover back on the pot. This will soften the kale and scallions without making more dishes!

    Once softened, add in the olive oil, lemon juice, garlic powder, salt and pepper. Stir well and garnish with the scallion greens. Enjoy warm or pop into the fridge to cool down.

    How to Store Leftover Kale Quinoa Salad:

    You can store leftover kale quinoa salad in an airtight container in the fridge for up to 1 week. If you're prepping for weekday lunches, I love using wide mouthed pint Mason jars. Fill up halfway, then top with your choice of additional veggies, protein or other toppings!

    Kale Quinoa Salad with Lemon Dressing

    A simple Kale Quinoa Salad with Lemon Dressing that's made all in one pot. Minimal ingredients and minimal clean-up for a perfect side dish or meal prep lunch!

    Ingredients

    • 1 cup quinoa rinsed
    • 1/2 teaspoon salt
    • 1/2 bunch kale stems removed
    • 4 scallions whites and greens separated
    • 3 tablespoons olive oil
    • 1/2 lemon juiced
    • 1 teaspoon garlic powder
    • ¼ teaspoon crushed red pepper flakes
    • salt & pepper

    Instructions

    • In a medium saucepan, bring 1 1/2 cups water to a boil. Add in the quinoa and cover. Cook for 15 minutes or until all water is gone.
    • Once cooked, turn off the heat and add in the sliced whites of the scallion and the shredded kale. Put the lid back on and steam the vegetables for 5 minutes.
    • Drizzle on the olive oil, lemon juice, garlic powder, crushed red pepper flakes and a dash of salt and pepper. Stir well and serve or refrigerate to cool first.
