A simple Kale Quinoa Salad with Lemon Dressing that's made all in one pot. Minimal ingredients and minimal clean-up for a perfect side dish or meal prep lunch!

Ingredients
1cupquinoarinsed
1/2teaspoonsalt
1/2bunchkalestems removed
4scallionswhites and greens separated
3tablespoonsolive oil
1/2lemonjuiced
1teaspoongarlic powder
ΒΌteaspooncrushed red pepper flakes
salt & pepper
Instructions
In a medium saucepan, bring 1 1/2 cups water to a boil. Add in the quinoa and cover. Cook for 15 minutes or until all water is gone.
Once cooked, turn off the heat and add in the sliced whites of the scallion and the shredded kale. Put the lid back on and steam the vegetables for 5 minutes.
Drizzle on the olive oil, lemon juice, garlic powder, crushed red pepper flakes and a dash of salt and pepper. Stir well and serve or refrigerate to cool first.
