    Healthy Creamy Coleslaw

    Coleslaw is a classic for so many reasons, but this healthy Creamy Coleslaw recipe is a refresh on the old classic. It's lightened up and with a kick!

    This Healthy Creamy Coleslaw recipe is going to become a staple in your summertime kitchen. With a handful of pantry basics and only 10 minutes of prep time, you can whip up this side dish for any occasion.

    Every good BBQ meal needs a light, bright, crispy vegetable side. And this easy, straightforward version is lightened up by using only a small amount of mayo to let the other flavors and textures shine!

    Plus, you can add a little jalapeno for a slight kick, if you're into that sort of thing!

    Is cabbage good for you?

    Cabbage is one of my favorite vegetables to have on hand all year long because it's super versatile and has a long shelf life. It can be eaten raw in salads or slaws or it can be cooked down into soups or stir-fries to bulk them up without adding too many calories!

    How to store cabbage: Cabbage will keep in your fridge uncut for up to a month. Once cut, you should tightly wrap it and store it in an airtight bag. It will still last a few weeks, but you may find that the cut side is looking a little dry. Just slice it off in a thin layer to expose the fresh insides, toss out the old cut layer, then use the rest!

    Health benefits of cabbage: Cabbage is packed with vitamin C, fiber, potassium and folate. It's low in carbohydrates yet high in fiber, which makes it a great choice to bulk up meals.

    How to make this Healthy Creamy Coleslaw:

    First up, we'll prep the vegetables. Thinly slice the cabbage, onion and jalapeno (if using) and shred the carrot. Then toss everything into a large bowl.

    Drizzle on the olive oil and white vinegar, then the salt, pepper and dill seed (if using). Add a good dollop of mayo and stir well to coat all the vegetables.

    Cover and refrigerate for at least 30 minutes. The longer it rests in the fridge, the better it will be. The cabbage softens more and all the other flavor meld together. You can prep this up to 24 hours before you're planning to serve it and just store it in the cold fridge until your meal!

    Healthy Creamy Coleslaw

    An easy, straightforward recipe for a classic BBQ side dish - coleslaw. This version is lightened up by using only a small amount of mayo to let the other flavors and textures shine! Add a little jalapeno for a slight kick, if you're into that sort of thing!

    Ingredients

    • 2 cups shredded cabbage about ¼ of a cabbage
    • 1/4 cup shredded carrots
    • 1/2 small onion thinly sliced
    • 1 jalapeno chopped finely (optional)
    • 1 tablespoon olive oil
    • 2 tablespoons white vinegar
    • 1 tablespoon mayonnaise
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • A sprinkle of dill seeds or dried dill

    Instructions

    • In a large bowl, combine the shredded cabbage, shredded carrots, onion and jalapeno. Add in the olive oil, vinegar, mayo, salt, pepper and a little dill seeds or dried dill. Stir together until well mixed and all the vegetables are well coated.
    • Refrigerate for at least 30 minutes or up to 4 hours before serving.
