    Spicy Honey Bourbon Marinated Steak Tips

    Few things are as easy and decadent on the grill as these Spicy Honey Bourbon Marinated Steak Tips. They marinate for a few hours before cooking on a hot grill to caramelized, crispy perfection.

    If you aren't from New England, you may not be familiar with Steak Tips. Steak Tips, or Sirloin Tips, are a super tender cut of meat, typically from the tail end of the sirloin that are typically marinated for a long time then grilled hot.

    Before we moved to Boston, the only place we could get steak tips in our hometown in upstate New York was at the fancy butcher shop. They always came marinated in a variety of sweet/tart marinades. It's amazing that only 2 1/2 hours away, steak tips are on every menu, from fancy restaurants to dives, and are widely available all year long in the grocery stores.

    Often I worry that localized food, an important part of our identities and food economy, is dying. But right here is a good lesson that even in the ultra-globalized food world of 2019, regional food is alive and well. Hallelujah.

    Unless of course you're looking for steak tips at the butcher outside of New England. Ask for Sirloin Flap Meat -- not quite as appetizing sounding as Steak Tips, but theoretically is the same cut of meat.

    Steak Tips are typically marinated in something that's a little sweet, a little sour and a little salty. It helps the outside of the meat caramelize nicely when it's on the grill.

    In our version, we marinate the steak tips a mixture of honey, bourbon, soy sauce, garlic, and sriracha for a little kick! Then they hang out in the fridge for a few hours before being tossed on a hot grill.

    How to Make Easy Steak Tips

    1. Whisk up a quick marinade
    2. Marinate the tips for a few hours
    3. Grill 'em hot and fast

    Spicy Honey Bourbon Steak Tips | Sip and Spice

    Spicy Honey Bourbon Marinated Steak Tips

    Ingredients

    • 2 1/2 - 3 lbs sirloin steak tips
    • 4 tablespoons Worcestershire sauce
    • 3 1/2 tablespoons honey
    • 3 tablespoons bourbon
    • 3 tablespoons soy sauce
    • 2 tablespoons sriracha
    • 4 cloves garlic minced
    • 1/4 teaspoon marjoram optional
    • 1/2 teaspoon salt
    • 1/2 teaspoon cracked black pepper

    Instructions

    • In a bowl, mix together the Worcestershire, honey, bourbon, soy sauce, sriracha, minced garlic, marjoram, salt and pepper. Whisk together.

    • In a small baking dish or plastic bag, lay the steak tips down add the marinade over the top. Cover in plastic wrap and refrigerate for at least 4 hours.


    • Once marinated, heat a grill to medium-high heat. Once hot, add the steak tips and cook for 4-5 minutes per side, or more if they're especially large. Remove from grill and let rest for 5 minutes. Serve hot!
