    Watermelon Basil Vodka Cooler

Watermelon Basil Vodka Cooler with lime and basil

Hello summer! You beautiful babe, you’re finally here. And we’re celebrating with a delicious semi-frozen Watermelon Basil Vodka Cooler.

It requires only 5 ingredients and tastes like warm days by the pool. It’s easy to make just a couple or to multiply for a crowd. The blended watermelon is deliciously refreshing and the little kick of savory basil makes this taste like a sip of sunshine.

We love this recipe because I love buying watermelon to snack on during the summer, but it's honestly hard for 2 people to eat a whole watermelon by themselves without getting sick of it too quickly. So if we take a chunk of it, blend it up and spike it, it's easier to work our way through the whole melon within a few days.

Because the water-content of watermelon is so high (go figure!), we don’t need to add much else to this cocktail to balance out the alcohol. The handful of ice cubes we toss into the blender is to help cool it all down to keep things fresh on a hot day, but the ice is not entirely necessary.

If you want to be extra festive, try scooping out the watermelon and blending up a big batch of these and serving it right out of the watermelon! So cute.

Serve with a sprig of basil, spritz of lime and maybe an extra wedge of watermelon!
