Preheat the oven to 425ยช F. Wash and dry potatoes. Scrub the outer skin well since we'll leave the skins on.
Cut potatoes into match sticks of about 1/2 inch thick. Imperfect is okay!
Spread on a sheet pan and drizzle with olive oil. Sprinkle on all seasonings. Toss with you hands to fully coat.
Bake in oven for 20-25 minutes until fries are golden brown and crispy on the bottom - fries should release easily from the pan. If they don't, keep 'em in for a few more minutes. Once they can be flipped easily, stir and then finish in the oven for 10-15 minutes.
Remove from oven and sprinkle with some additional salt. Serve warm with condiment of choice (garlic aioli is a stellar choice here!)
