    Peanut Butter Acai Bowl

    A few weeks ago, I stopped into Liquiteria in Cambridge, MA with my sister and I had a peanut butter acai bowl that seriously rocked my world.

    I was completely overwhelmed by all the choices and wanted to order one of everything. When that's the case (...it often is!), I always ask people behind counter what their favorite item on the menu is. When the answer was "Well, 9 times out of 10, I get the Peanut Butter Acai Bowl", it was pretty obvious.

    I mean, does anything sound better?

    But get this: it ended up being equal parts acai base, smooth, gritty peanut butter and granola. A third, a third, a third—just like that.

    They were not messing around.

    On our walk back across the river to her apartment, I inhaled that thing. And every few minutes, I hesitantly offered my sister a bite (the curse of being a big sister—we're not very good at being selfish)

    And ever since then, I've been on a mission to re-create that bowl.

    Now, I'm pretty sure that it's not really possible, but the recipe here is the closest that I can get. The key is to pick a granola flavor that's not super overpowering—try vanilla or cinnamon (or, if you can find a peanut butter one, even better!).

    And also: don't be stingy on the peanut butter scoop on top. That's what makes this baby shine.

    Peanut Butter Acai Bowl

    Prep Time 5 minutes
    Servings 1 bowl

    Ingredients

    • 1 packet acai
    • 1/2 frozen banana
    • 1/2 medjool date
    • 1/8 cup almond milk
    • 1 tablespoon peanut butter
    • 2 tablespoons cinnamon granola
    • 1 teaspoon cacao nibs

    Instructions

    • Break up the frozen acai packet by hitting it against the counter or hammering with a kitchen mallet. (I'm sure this isn't the technical way to make this happen, but it works!)
    • In a high-speed blender, blend the acai, banana, date and almond milk on high for 1 minute.
    • If your peanut butter is soft, great! If you keep yours in the fridge like me, put it in a small bowl and microwave for 30 seconds so it's spreadable.
    • Pour the acai base into your bowl, top with peanut butter, granola and cacao nibs. Dig in!
