
For nights when you want something light yet filling and not-boring, this simple Lemony Baked Fish is the perfect dish! It takes less than 20 minutes start to finish and can be made with any flaky white fish such as haddock, cod or tilapia.
Getting fish into your diet 1-2 times per week has a whole host of nutritional benefits. It's a great source of Omega-3 fatty acids, Vitamin B12 (which we need for brain and nerve function), iodine, phosporus and niacin. It's a low-fat protein source that's nutrient dense (i.e. it packs in a lot of nutritional benefit for less calories than other protein options).

Honestly, any flaky white fish will work really well here! Grab whatever's on sale at the grocery store - cod, tilapia, haddock or flounder all work well!
What should I serve with this baked fish?
I always love to have a vegetable like sauteed green beans, roasted broccoli or steamed asparagus. Additionally, toss in a simple side starch like rice pilaf, roasted potatoes or crusty bread to round out the meal.

How to Make Lemony Baked Fish
First up, drizzle some olive oil in the bottom of a baking pan. Add in the fish and season with salt and pepper.
Then mix together the breadcrumbs, spices and olive oil. I like using panko breadcrumbs because they get extra crispy. Pour over the top of the fish and spread out with your fingers.
Bake in a 350 F oven for 15 minutes. Serve hot!
Lemony Baked Fish
Ingredients
- 1 lb white fish cod, haddock, tilapia, flounder
- 3/4 cup panko breadcrumbs
- 2 teaspoons Italian seasoning
- ½ teaspoon garlic powder
- 2 tablespoons olive oil
- kosher salt and black pepper
- lemon wedges and fresh parsley for serving optional
Instructions
- Preheat oven to 350 degrees.
- Put a spoonful of olive oil in a baking dish and spread to coat the bottom.
- Combine panko bread crumbs with the rest of the olive oil in a small bowl along with the Italian seasoning and garlic powder.
- Salt and pepper both sides of the fish liberally, and lay in buttered baking dish. Spread bread crumbs evenly over the fish.
- Bake for 15 minutes, or until fish is cooked thoroughly (and flakes easily). Serve with a squeeze of lemon juice and a garnish of fresh parsley, if desired.
