This Simple Summer Pesto Tortellini Toss is a delicious side dish, light main dish or lunch on a summer day! Make it whenever fresh basil and tomatoes are abundantly in season.

I always keep a few packages of Trader Joe's spinach tortellini in the back of the freezer for nights when we need a quick meal or a quick side dish! They're super versatile and quick to cook!
This Simple Summer Tortellini Toss is a perfect side dish with basil and tomatoes are abundantly in season. It celebrates those late summer veggies and if you have anything else lying around that you need to use, you can toss it in too! Some onion, chicken, spinach or anything else will fit perfectly into this dish.

I always make sure to have a batch of my Homemade Basil Pesto in the freezer so it's on hand for tossing to sauces, spreading on sandwiches and so many other uses! It's what I always use in this Pesto Tortellini Toss because it's fresh and delicious.
If using pesto from frozen, simply toss it on the hot pasta to help it melt into the dish. Give it a few more minutes, stirring frequently to coat.

How to make Simple Summer Pesto Tortellini Toss:
Cook and drain the tortellini or any pasta you like. Place it back in the pot.
Add in the pesto and toss to coat thoroughly. Add a little olive oil if needed!
At this point, you can add in the diced tomatoes and Parmesan, plus anything else that you have on hand that you want to use up! I've been known to add onions, cooked chicken, other cheese, spinach or kale, broccoli or additional roasted vegetables.
Serve by itself or with something off the grill like chicken, steak, veggie burgers or sausages!

Ingredients
- 1 package (8 oz) spinach or cheese tortellini
- 2 tablespoons basil pesto
- 1 vine tomato diced
- Parmesan cheese optional
Instructions
- Cook and drain the pasta according to the package directions. Drain and toss back into the pot it was cooked in. Add in the pesto and stir to coat. Toss in the diced tomato and parmesan cheese and serve!
