    Almond Joy Smoothie Bowl

    Life's too short to wake up to a boring breakfast.

    That's part of why I love smoothie bowls. They're pretty, creative and colorful—which is truly the perfect way to start your day. Well, second to a cup of coffee, of course.

    Even with smoothie bowls though, I fall into a rut. I always have the same ingredients on hand, so I often make the exact same bowl over and over and over again. I can sprinkle the toppings differently from day to day, but eventually I need to shake it up.

    So I try and get a little creative by brainstorming new ways to use the stuff that's hanging around the kitchen. That's how the PB&J Smoothie Bowl and the Mint Chocolate Chip Bowl have been born. They're favorite flavor combos re-imagined.

    Because when you're running out of inspiration, return to what you know.

    And that's exactly where the Almond Joy Smoothie Bowl comes to play. Almond Joys were a favorite around our house growing up and could only be found for a few short days after Halloween.

    So, armed with almond butter, coconut milk and cacao nibs in the pantry, it had to be done.

    It's slightly reminiscent of the candy bar, but is loaded with nutritious goodness—healthy fats, fiber, protein and tons of vitamins. Plus, that color green makes my heart flutter.

    Almond Joy Smoothie Bowl

    Prep Time 5 minutes
    Servings 1

    Ingredients

    • 3/4 cup coconut milk
    • 1 cup spinach
    • 1/2 frozen banana
    • 1/2 cup frozen cauliflower
    • 1 tablespoon almond butter

    Toppings:

    • 1 tablespoon coconut flakes
    • 1 tablespoon sliced almonds
    • 1 tablespoon cacao nibs

    Instructions

    • Layer coconut milk, spinach, banana, cauliflower and almond butter in a blender. Blend on high until smooth.
    • Top with coconut flakes, almonds and cacao nibs. Dig in!
