    There's no shortage of potato salad recipes out there. The internet has thousands and everyone swears that their Mama's is the best... but none of those compare to this fresh and new take on the potato salad game: Healthy German Potato Salad.

    Whenever we're grilling out, the question always becomes: What are we going to have on the side? A summer salad, of course! Often it's a green salad, sometimes it's a pasta salad, from time to time this Spicy Black Bean Salad, but every so often the answer is potato salad.

    This Healthy German Potato Salad takes it all to a new level with the addition of sauerkraut and a small amount of bacon, just for flavor. Maybe that negates the "healthy" part in your opinion, but there's really just a touch of bacon for flavor... and I promise you won't regret it!

    Plus, instead of using any mayo or sour cream, just a dollop of greek yogurt will impart a touch of creaminess that will keep you going back for "just another bite". And with the sauerkraut, it becomes a fabulous fermented probiotic side dish that's equal parts savory and funky.

    Healthy German Potato Salad

    Servings 4 people

    Ingredients

    • 6 small russet potatoes
    • 3 tablespoons bacon fat
    • 2 slices thick-cut bacon
    • 1/4 cup diced white onion
    • 1/4 cup diced chives
    • 2 tablespoons white wine vinegar
    • 1 tablespoon greek yogurt
    • 1 teaspoon dijon mustard
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon salt

    Instructions

    • Boil potatoes for 20-25 minutes until you can easy stick a fork into the center.
    • Cook the bacon and dice.
    • Remove potatoes from the pot and let cool a minute before dicing into 1-inch pieces. Add to a bowl with the diced bacon, white onion, 1/2 the chives, bacon fat, white wine vinegar and greek yogurt.
