    Healthy Sweet Potato Fries with Seasoned Garlic Mayo

    I love a good french fry. Classic bistro fries, truffle parmesan fries, waffle fries, steak fries, polenta fries, shoestring fries, you name it. I'm not picky, any type will do. But I especially love an order of nutrition-packed healthy sweet potato fries.

    While I'm never one to turn down a regular potato, sweet potatoes carry a ton of extra nutrients including a whole bunch of Vitamin A, a boatload of potassium and tons of fiber. And with all the added benefits, they actually pack fewer calories per cup. Plus, they bring a super interesting flavor and texture to the table.

    But when usually when you order sweet potato fries out at a restaurant, they negate some of these health benefits by deep frying the fries. Not that I'm one to turn down a side order of fries, but it's just good to know. That's why it's extra nice to make a batch of sweet potato fries at home so you can bring things back into balance by baking the fries using a small amount of olive oil. They're just as tasty and way healthier—which is usually where cooking at home has its major benefits!

    So, how do you make extra healthy sweet potato fries at home?

    Well, thankfully, they're super easy, very quick to make and require few ingredients... the majority of which you probably already have in the pantry!

    The key is in the slicing of the sweet potatoes, a little variety in the width of each fry will give you these partially browned sides that are truly divine!

    And we LOVE dipping fries in a super flavorful aioli. For these fries, we whipped up a quick Seasoned Garlic Aioli adding chipotle seasoning and jalapeno juice to a typical aioli base like my Easy Garlic Aioli.

    Healthy Sweet Potato Fries with Seasoned Garlic Aioli

    Prep Time 10 minutes
    Cook Time 30 minutes
    Total Time 40 minutes
    Servings 2 servings

    Ingredients

    • 2 medium sweet potatoes
    • 2 tablespoon olive oil
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon cayenne pepper optional

    Seasoned Garlic Aioli

    • 1/4 cup mayonnaise
    • 1 teaspoon pickled jalapeno juice
    • 1 garlic clove minced
    • 1/2 teaspoon chipotle seasoning
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon salt

    Instructions

    • Preheat the oven to 425ºF. Slice the potatoes into thin 1/2-inch square fries—don't worry about being perfect!
    • Put the fries on a baking sheet with the olive oil, salt, pepper, garlic powder and cayenne. Toss with your hands and ensure that the potatoes are in a single layer.
    • Bake for 15 minutes, flip and bake for another 10-15 minutes until just starting to brown. Remove from the oven, shake around and let cool a couple minutes.
    • In a small bowl, mix the mayonnaise, jalapeno juice, minced garlic, chipotle seasoning, black pepper and salt.
