    Fried Green Beans with Wasabi Ranch

    This once-in-awhile snack is too good to keep to ourselves!

    The first time I ever had fried green beans was at Brown's Brewery in Troy, NY. They were perfect crunchy bites of heaven covered in a thick crispy batter. And served with a spicy ketchup that was out of this world.

    And then one day... they took them off the menu. I was devastated and have since refused to go back to Brown's—quite reasonable, if you ask me!

    So, we had no choice but to try to make our own.

    And I'll be honest, we haven't even come close to re-creating that spicy ketchup... I have no idea idea what it was that made it so balanced and spicy without being smoky or vinegary.

    But these green beans are preeeetty close to the original.

    If you've never made your own ranch with greek yogurt before, try it today. I kept finding myself grabbing the bottle of ranch dressing to drizzle on salads, pizzas, you name it! So I decided to stop keeping it in the house. But I always have a container of greek yogurt in the back of the fridge and with a little ranch seasoning in the pantry, a single serving of ranch is always in reach!

    The wasabi ranch dipping sauce is delicious with fried green beans and super quick to make—that nasal bite of wasabi is the perfect contrast to the heaviness of the fried beans. And it's just the easy combo of greek yogurt and wasabi paste and ranch seasoning!

    Fried Green Beans with Wasabi Ranch

    Servings 2

    Ingredients

    • 1/4 cup canola oil
    • 1/2 cup flour
    • 1 tablespoon cornstarch
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/4 teaspoon smoked paprika
    • 1/2 teaspoon salt
    • 6 oz beer preferably an IPA
    • 1/2 lb green beans trimmed

    Wasabi Ranch

    • 1 teaspoon wasabi powder
    • 3/4 teaspoon water
    • 1/4 cup greek yogurt
    • 3/4 teaspoon ranch seasoning

    Instructions

    • In a medium saute pan, heat the oil over medium heat.
    • In a small bowl, combine the wasabi powder and water to create a paste. Let sit for 5 minutes.
    • In a medium bowl, whisk together the flour, cornstarch, salt and beer until smooth. Working in batch, dredge a few green beans in the beer batter, then place in the hot oil. Cook for 3-4 minutes per side then remove to a paper towel lined plate to drain. Repeat until all green beans have been cooked.
    • Add the greek yogurt and ranch seasoning to the wasabi paste and mix well.
