Mexican Panzanella Salad

Ingredients

  • 1 1/2 cups cubed bread
  • 1 diced large tomato
  • 1 diced avocado
  • 1/2 bunch scallions, chopped
  • 1/2 jalapeno, chopped
  • 1 clove crushed garlic
  • 1/4 cup chopped cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon smoked paprika
  • 1/4 lime, optional

Instructions

  1. Preheat the oven to 375ºF. Place the cubed bread on a tray and toast for 10 minutes until golden brown.


  2. In a large bowl, combine the diced tomato, avocado, scallions, jalapeno, garlic and cilantro. Pour the toasted bread over the top and add the olive oil, vinegar, oregano, cumin, salt, pepper and smoked paprika.


  3. Stir well and top with a squeeze of lime!
