Healthy German Potato Salad

Ingredients

  • 6 small russet potatoes
  • 3 tablespoons bacon fat
  • 2 slices thick-cut bacon
  • 1/4 cup diced white onion
  • 1/4 cup diced chives
  • 2 tablespoons white wine vinegar
  • 1 tablespoon greek yogurt
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Boil potatoes for 20-25 minutes until you can easy stick a fork into the center.
  2. Cook the bacon and dice.
  3. Remove potatoes from the pot and let cool a minute before dicing into 1-inch pieces. Add to a bowl with the diced bacon, white onion, 1/2 the chives, bacon fat, white wine vinegar and greek yogurt.
