Healthy Sweet Potato Fries with Seasoned Garlic Aioli

  • 2 medium sweet potatoes
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper optional

Seasoned Garlic Aioli

  • 1/4 cup mayonnaise
  • 1 teaspoon pickled jalapeno juice
  • 1 garlic clove minced
  • 1/2 teaspoon chipotle seasoning
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt


  1. Preheat the oven to 425ºF. Slice the potatoes into thin 1/2-inch square fries—don't worry about being perfect!

  2. Put the fries on a baking sheet with the olive oil, salt, pepper, garlic powder and cayenne. Toss with your hands and ensure that the potatoes are in a single layer.

  3. Bake for 15 minutes, flip and bake for another 10-15 minutes until just starting to brown. Remove from the oven, shake around and let cool a couple minutes.

  4. In a small bowl, mix the mayonnaise, jalapeno juice, minced garlic, chipotle seasoning, black pepper and salt.
