Combine the cucumber spears, water, vinegar, garlic, fresh dill, sugar, salt, picking spice, dill seed, red pepper flakes, and mustard seed in a large bowl. Toss to coat the cucumbers and let sit for at least 2 hours at room temperature
Grab 3 pint size mason jars & divide the cucumber spears between them. Spoon the remaining liquid into each jar and seal with lid.
