Pumpkin Chai Chia Pudding

Ingredients

  • 3/4 cup almond milk
  • 1/4 cup pumpkin puree
  • 1/4 cup chia seeds
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon ginger

Instructions

  1. Whisk all ingredients together in a bowl.


  2. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.


  3. Pour into a blender and blend on high for 1 1/2 minutes until totally creamy.


  4. Top with your favorite toppings since as star anise (so pretty!), cinnamon, cacao nibs, coconut cream, coconut flakes, extra chia seeds, nuts or anything your heart desires!
