I'm forever in search of the most delicious smoothie bowl combination. It's my lifelong goal, at least for as long as the weather is warm. So when a bowl tastes like my favorite ice cream flavor, I'm sold.
Which is why I love trying to recreate my all-time favorite flavor combos in smoothie bowl form. Some really awesome creations have happened this way like the PB & J bowl, the Almond Joy bowl, and the Blueberry Muffin bowl.
Mint Chocolate Chip is my all-time favorite ice cream flavor. I truly think that if I had to choose only one ice cream flavor for the rest of eternity, it would be that. I'd certainly miss coffee and maple and strawberry, but there's nothing quite as refreshing as mint! So, when we ended up with a big bunch of spearmint growing wild in the front yard, I knew it was a sign!
I gave it a whirl (literally!) with some kale and cauliflower for extra veggie-power, and wow, it was delicious. Next time, I might add a drop of mint extract—cause I'm obsessed. But this recipe got the seal of approval, as is, from my gorgeous sister and her boyfriend, so I had to share. Enjoy (and maybe add that extra mintiness, if you're mint-crazy like me)!
Mint Chocolate Chip Smoothie Bowl
Ingredients
- 3/4 cup almond milk
- 1 Medjool date
- 1/2 cup fresh mint leaves de-stemmed
- 1/4 cup kale leaves stems removed
- 1/2 frozen banana
- 1/2 cup frozen cauliflower
- 1 tablespoons cacao nibs
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds
- 1 tablespoon coconut flakes
Instructions
- Layer almond milk, date, mint, kale, banana, and cauliflower in a blender and blend on high.
- Pour into a bowl and top with cacao nibs, chia seeds, hemp seeds, and coconut flakes.
