This Copycat Zoe's Kitchen Pasta Salad is a remake of my very favorite pasta salad from Zoe's Kitchen, a fast Mediterranean chain that I adored when I lived in Alabama.
Aside from the Spinach Roll-ups (think taquitos, but with spinach and feta dipped in salsa!), this Zoe's Pasta Salad was my favorite thing on the menu. No matter what, I always ordered a big bowl of it on the side.
It's a super simple pasta salad made with shell pasta, fresh tomatoes, fresh basil, feta, salt and pepper. That's it!
Oh, and a little EVOO, of course!
This Copycat Zoe's Kitchen Pasta Salad recipe will be the hit of your next BBQ, party or just the side dish at dinner. Nobody has to know just how easy it was to make.
How to Make Zoe's Kitchen Pasta Salad
1. Cook the pasta in heavily salted water and drain.
2. Chop the tomatoes, basil and feta and mix into the drained pasta.
3. Toss with salt, pepper and a good drizzle of olive oil and voila!
Copycat Zoe's Kitchen Pasta Salad
Ingredients
- 8 oz. shell macaroni
- 7 oz. feta cheese crumbled
- 12 oz. campari tomatoes chopped
- 24-30 basil leaves chopped
- 3 tablespoons olive oil
- salt
- pepper
Instructions
- Cook the pasta according to the directions on the package. Drain and let cool.
- Once pasta is cool, combine it with the crumbled feta, chopped tomatoes, basil leaves, olive oil, and a pinch of salt and pepper. Stir and let sit for at least 15 minutes before serving.
