Tis the season for heart-shaped everything, chocolate-covered fruits, and red and pink treats everywhere we look! Is there any other time of the year when it's appropriate to coat everything in this crazy color combination?!
In truth, I've always loved Valentine's Day. Before I even had a Valentine (shout out to my boo, Luke!), it was just a fabulous excuse in the middle of the grayness of winter to bake treats for friends, eat more chocolate than I should and tell the people I love just how grateful I am for them.
However, I have to tell you something highly controversial—I'm not a fan of chocolate-covered strawberries. Don't get me wrong, the flavor combo is delish and the chocolate has that fun crunch. But I hate when they come out of the fridge and the chocolate starts to... sweat... a little bit. Eww. I just can't deal. The chocolate gets a little mushy and so does the strawberry. Making for a waste of two very delicious ingredients. No good.
So here's to not wasting anything, but preserving the killer flavor combo...

Chocolate-Covered Strawberry Smoothie Bowl
Ingredients
- 3/4 cup almond milk
- 1 cup spinach tightly packed
- 1 date pit removed
- 1 1/2 tablespoons cacao powder
- 1/4 avocado
- 1 cup frozen strawberries
- 1 frozen banana
- Strawberry Granola from Cascadian Farm
- cacao nibs optional
- coconut flakes optional
- sliced strawberries optional
Instructions
- In a high speed blender, add the almond milk, spinach, date, cacao powder, avocado, strawberries and banana. Blend on high for 1 minute until smooth.
- Pour in bowl and top with granola, cacao nibs, coconut flakes and sliced strawberries
