Most Friday nights in our house are pizza night. It's our favorite way to celebrate the start of the weekend. And every couple months, we like to switch it up from the usual Margherita or Pepper and Onion pizza. This Caramelized Onion, Gorgonzola and Pear Pizza with Arugula and Toasted Walnuts is gorgeous and so satisfying.
It's such a fun, delicious shift from the typical pizza toppings and not all that much more difficult to put together. The combination of sweet fruit, savory onions and funky cheese is such an unexpected delight.
There's a good chance that you've seen (and tasted) some version of this combo. It's been popping up on flatbread menus everywhere...
Pear and Bleu Cheese, Gorgonzola, Prosciutto and Fig, Pear and Balsamic Reduction. They're all super delicious and easy to replicate at home. In fact, I started making this recipe years ago after having a similar pizza at California Pizza Kitchen with my mom. We were completely blown away by the delicious combo and I immediately went back home to figure out how to do it myself.
And Luke and I have been keeping it in the pizza night rotation ever since.
It's totally addictive and delicious. Plus, it's topped with dressed arugula which makes it super pretty and basically a health food.
Caramelized Onion, Gorgonzola and Pear Pizza with Arugula
Ingredients
- 1 batch dough
- 4 tablespoons olive oil
- 1 yellow onion sliced thinly
- 1 pear sliced thinly
- 6 oz. mozzarella shredded
- 2 garlic cloves minced
- 1/4 cup + 1 tablespoon gorgonzola
- 1/4 cup chopped walnuts
- 3 tablespoons greek yogurt
- 2 1/2 tablespoons water
- 2 teaspoons ranch seasoning
- 3 cups arugula
Instructions
- Preheat the oven to 450 F. Prepare your pizza pan or sheet pan with olive oil spray if necessary.
- In a small saute pan over medium heat, add 1 tablespoon olive oil and the thinly sliced onion. Saute for 10 minutes until golden brown and fragrant. Remove from the pan and set aside.
- Place the pan back over the heat and add the sliced pear. Cook for 4-5 minutes until pear is softened, careful not to break up the pear slices when you stir.
- Spread the pizza dough out on a round pizza pan. Drizzle on the remaining 3 tablespoons of olive oil and spread out the minced garlic pieces across the dough, leaving a 1/2 inch around the perimeter for a crust. Layer on the caramelized onions, then sprinkle on the mozzarella and 1/4 cup of the gorgonzola. Spread out the cooked pear slices and place pizza in the oven for 15 minutes to bake. Pizza is done when the underneath is firm and golden and the cheese is golden brown.
- Place the saute pan back over medium heat and toast the walnut pieces for just about 5 minutes until they start to brown. Careful not to let them burn! Set aside.
- In a medium bowl, combine the greek yogurt, water, ranch seasoning and remaining 1 tablespoon gorgonzola. Mix well, then add in the arugula and toss to fully coat.
- Remove the pizza from the oven once fully cooked. Sprinkle on the toasted walnuts, then top the pizza with the dressed arugula. Dig in!
